The recipe, republished by Telegrafi, is not for those in a hurry—but it is simpler than it looks if the steps are followed in order. The bun starts by caramelizing sugar in butter, with apple juice and apple syrup added next. Red onions and apples are sliced thin and gently sautéed until golden.
The meat: three cuts, not one
The most interesting part is the meat. According to the recipe, Ramsay uses a ground blend of three veal cuts—rib, shoulder and tenderloin—to give the patty a richer texture and deeper flavor. Garlic powder, salt, pepper and a touch of apple preserve round out the mix before the patties hit a hot skillet.
According to Telegrafi, the secret lies in “basting the meat during cooking with a mixture of apple preserve and salted butter,” which creates a signature glaze and a sweet-savory flavor.
After searing, a slice of white cheese is melted slowly on top of each patty. The phyllo bun is baked separately until puffed and crisp, layered with the caramelized onions and apples.
